Another Wheat-Free Option from our Maryland Bed and Breakfast….

We have written before about the pride we take in our ability to cater to the special needs of guests with food allergies and other dietary restrictions.  We want everyone to be able to enjoy the full, hearty breakfast that we’re known for.  There are lots of  flour substitutes out there that make perfectly lovely pancakes and waffles.  But one of our favorites, and an incredibly easy option, is the oatmeal waffle.   It is for serious oatmeal lovers, and is a bit heavier than our popular yeasted waffles.  Topped with fresh fruit and a touch of real maple syrup, it is a healthy, tasty, and filling start to the day.

Oatmeal Waffles

2 eggs, separated
3 cups old fashioned oats
2 teaspoons baking powder
pinch salt
2 tablespoons baking powder
1 1/2 cup milk
1 stick butter, melted
Have all ingredients at room temperature.
Mix together all dry ingredients in a large bowl.
Add egg yolks to the milk and whisk together.
Slowly add the cooled, melted butter to the milk and eggs.
Beat the egg whites with a wire whisk until stiff.
Blend wet ingredients into dry,and set aside for about 10 minutes.  This allows the oatmeal to absorb some of the milk. Gently fold in the whites, being careful not to overmix.
Cook in your favorite waffle iron.  These waffles taste best if cooked well done and slightly crispy.
